With the fall season in the air, I am beginning to think of all things fall.
One of my favorite things is the caramel popcorn balls we used to love to get at Halloween.
Thinking of these reminded me of a recipe I just love, with a twist on the old time caramel corn.
Caramel Puff Corn with Nuts
I feel like I need to start this off with a warning:
BEWARE – this “Caramel Puff Corn with Nuts” is addictive! And the calorie content is not low!
But oh how delicious it is!
You will need:
Approximately 10 ounces of puff corn. Some bags I found contained 3 ounces and some 5. Choose a combination that will give you around 10 ounces.
1 large can of mixed nuts or the nuts of your choice
1 lb. of real butter
2 cups of brown sugar
½ cup white corn syrup
½ teaspoon of soda
½ teaspoon of vanilla
Let’s get cooking!
Preheat the oven to 250 degrees.
Empty the puff corn into two large baking pans with sides. The bigger the pans the better, as it will make it easier to stir the corn.
Sprinkle the can of nuts over the puff corn in each pan and set aside.
Melt the butter in a large sauce pan over medium heat.
Once the butter is melted, add 2 cups of brown sugar and ½ cup of white corn syrup. Bring this mixture to a boil and let boil for 5 minutes, stirring often.
Take the saucepan with the sugar mixture off of the burner and add ½ teaspoon soda and ½ teaspoon vanilla and stir well.
Pour the mixture over the corn.
Bake in the oven for 40 minutes, stirring every 10 minutes. The hardest part of this recipe is trying to stir the corn without some falling out of the pan. I usually just eat those – Ha!!
Spread the corn on a layer of aluminum foil or waxed paper and let cool.
Filling containers with Caramel Puff Corn with Nuts would make a delicious Halloween Treat box!
