Raspberry Bars - Rich and Delicious

Serves: 40 1x3 inch bars
Raspberry Bars make a quick and easy dessert or cookie.
  • ½ cup of butter or margarine
  • 1 cup brown sugar
  • 1½ cups flour
  • ½ teaspoon salt
  • ½ teaspoon soda
  • 1½ cups oatmeal
  • 2 tablespoons water
  • 1 cup raspberry jam (12 oz. jar)
  1. Begin by creaming together the butter and sugar until light and fluffy.
  2. Sift the flour, salt and soda together and stir into the creamed mixture.
  3. Add the oatmeal and 1 tablespoon of the water and mix until crumbly.
  4. Firmly pat one-half of the mixture into a greased 13x9x2 inch baking pan.
  5. Spread the raspberry jam over the mixture.
  6. Stir remaining water into the remaining crumbs and sprinkle over the raspberry jam. Pat Smooth.
  7. Bake at 350 degrees for 25 – 30 minutes.
  8. Cool and cut into 1x3 inch bars.
