Easy Mac and Cheese Veggie Chicken Casserole

  • 6 Tbs. melted butter
  • 1 cup 1% milk
  • 8 oz. Rotini pasta.
  • 2 Cups diced cooked chicken (I drained 2 cans of chicken)
  • 4 cups frozen vegetables, thawed (I used steamed fresh broccoli)
  • 3 cups shredded cheddar cheese
  • ¼ cup dry bread crumbs or crushed Ritz crackers
  • 1 Tbs. grated Parmesan cheese
  1. Begin by preheating the oven to 350 degrees.
  2. Cook pasta according to package directions and drain.
  3. Combine 4 Tbs. melted butter, milk, pasta, chicken, veggies and cheddar cheese in a medium bowl.
  4. Place mixture into a small baking dish. The dish I used was 9x11.
  5. Combine bread crumbs OR crushed cracker, grated Parmesan cheese, and 2 Tbs. of melted butter in a small bowl.
  6. Sprinkle the cracker mixture on top of casserole.
  7. Bake for 30 minutes or until heated through.
