Cook and mash your sweet potatoes. To make the process go quicker I baked my potatoes in the microwave. I simply placed the potatoes in a brown paper bag and cooked them in the microwave for approximately 10 minutes or until they were soft and ready for mashing.
Once the potatoes are mashed add the 2 Tablespoons of butter to the potatoes and mixed well.
In a medium bowl combine the eggs, sugar, salt, spices and milk.
Blend the two mixtures together and mix well.
Place pie crust into a 9” pie pan.
Pour mixture into prepared pie crust.
Bake at 450 degrees for 10 minutes on the middle rack of the oven. Reduce heat to 350 degrees and bake 30 – 40 minutes more or until filling is firm.
