Do you have a recipe that just brings back wonderful memories? So often when I pull out my recipe box or book, I run across a recipe that makes me think of someone who played a special part of my life and the memory of that special someone just warms my heart.
Today I am sharing a recipe that my mother used to prepare for a special event or dinner we might have. My daughter has always loved this recipe and we used it at her bridal shower. It brings back special memories of my mom and her grandma to both of us each time we prepare it.
We really don’t know what the original name of it was, but because we used it for special times, we fondly call it “Party Casserole”.
Mom’s Party Casserole
The ingredients we will use today are:
1 can cream of mushroom soup
I can cream of chicken soup
1 5 ounce can of carnation milk
1½-2 cups of cooked diced chicken – to make it simpler, I use 2 cans of chicken
2 cups of Chow Mein noodles
1 cup of cooked celery
½ of a medium green pepper
½ cups sliced almonds
1 cup chopped mushrooms or one small can stems and pieces
1 small jar of pimentos
1 sleeve of Ritz crackers – crushed
1 stick of butter
Preheat the oven to 350 degrees.
Begin by mixing the soups and milk together in a large mixing bowl.
Add remaining ingredients to bowl and stir together.
Place in a 2 quart long casserole dish.
Sautee crushed Ritz crackers in butter and sprinkle over the party casserole dish.
Cover and bake for 1 hour or until done.
Uncover the last 15 minutes to brown.
Served with a salad, this party casserole makes a delicious meal.
