Watch out pumpkin pie, there’s a new favorite on the menu!
That’s right – we have a new holiday favorite when it comes to pies for our Thanksgiving feast.
Sweet Potato Pie – Real Southern Comfort Food!
A couple of years ago our church was holding a bake sale and we purchased what looked like the classic pumpkin pie. We delved into a piece when we got home and discovered we had a delicious pie – but it wasn’t pumpkin. It was a wonderful sweet potato pie!
Of course I had to have the recipe and it has now become one of our favorites!
With the Thanksgiving holiday just around the corner, now is the perfect time to share this wonderful recipe with you.
Let’s get started by gathering together the ingredients:
2 eggs, slightly beaten
1 cup sugar
1 tsp salt
1/8 tsp nutmeg
1 scant tsp vanilla
1 tsp cinnamon
1 cup sweetened condensed milk – I used one can
1 ½ cup cooked, mashed sweet potatoes
2 T butter
Pie crust for a 9” pie
Heat your oven to 450 degrees.
Cook and mash your sweet potatoes. To make the process go quicker, I baked my potatoes in the microwave. I simply placed the potatoes in a brown paper bag and cooked them in the microwave for approximately 10 minutes or until they were soft and ready for mashing. My sweetie taught me this trick and it works wonderfully to cook potatoes.
Once the potatoes are mashed, add the 2 Tablespoons of butter to the potatoes and mix well.
In a medium bowl, combine the eggs, sugar, salt, spices and milk.
Blend the two mixtures together and mix well.
Place pie crust into a 9” pie pan.
Pour mixture into prepared pie crust.
Bake at 450 degrees for 10 minutes on the middle rack of the oven. Reduce heat to 350 degrees and bake 30 – 40 minutes more or until filling is firm.
Top with whipped cream and enjoy!
